So, I get so tired of hearing people say they can't afford to eat healthy! GEESH! Okay now that I got that out of the way. . . . lol! So I have been doing tons or research on healthy eating habits. Comparing the prices of healthy vs. unhealthy. Recipes which can easily be substituted to be made a healthier choice! 
So I am starting a Sunday Savings Post! Every Sunday I will compare a healthy meal vs. the not so healthy choice. Talking recipes and prices!

 SO here we go!!!

This week it is
Turkey Burger and Fries vs Hamburger and Potato Chips
  • Ground Turkey is cheaper then Ground beef! 1.99lb vs 2.99lb
  • A 15 lb bag of potatoes is cheaper then a bag of potato chips!
  • Ground Turkey has less fat and higher protein then Ground beef!
French Fries

The French Fries I make are simple! Russet potatoes cut and sliced into Fry sizes then placed on a cookie sheet. Spray lightly with Olive Oil. and sprinkle with garlic salt.
Then baked on a cookie sheet at 425 degrees. 10-15 minutes 
 
Turkey Burger

 Ingredients: 
Lean Ground Turkey
Green Onion
Italian Parsley
Worcestershire sauce
Mozzarella Cheese 1 slice for each burger (cut in quarters)

1 Lb of ground turkey will make 3-4 GOOD size burgers
For a LARGE Burger I do 6oz and for a Medium I do 4oz

I add  Green Onion, Italian Parsley and Worcestershire sauce  to taste!
Everyone is different! I personally love tons of green onions and Italian Parsley. Then I add just a couple splashes of Worcestershire Sauce.

Directions:
In a bowl, combine Ground Turkey, Green Onion, Italian parsley and Worcestershire sauce. Mix ingredients well.
Then separate out into serving sizes and roll in to a ball.
Take each ball and separate into 2 pieces 1 slightly larger then the other
Re roll each into ball then flatten each piece evenly. 
Place Cheese on larger half.
Then add smaller piece on top. Pinch edges together. 
Lightly roll together to hide the cheese and make it 1 piece again.
I bet you are wondering why I put the cheese inside the turkey! Well it is because it is amazing to bite into it and cheese comes gooing out! 
Oh and FYI Mozzarella cheese only has 50 Calories a slice compared to 110 Calories a slice in Cheddar Cheese!!!!
(Sorry if this is hard to follow, I know my directions skills are lacking !!)
 I use my George Foreman to cook my Turkey burgers but a BBQ works just as well. 
Using the George Foreman it only takes about 6 mins to cook!!! AMAZING!!!
 
When it is all done I wrap mine in a big piece of red or green leaf lettuce. 
However Ian likes his on a big fat burgerbun!!! LOL

Today is the Day!!!!

Yesterday I posted about mine and Ian's anniversary being today! Well little does he know it is full of surprises!!! Late Last night is when it all started an 11:00pm run to Albertsons to get some balloons and Ian's favorite Snicker Cake!!! I then dropped it off at his work, so he would see it this morning when he went in at 5:30! 
Then after making it home and getting my kids in bed, I started  on his edible arrangement!!! Cantaloupe, pineapple, grapes, oranges, white chocolate covered bananas, white and milk chocolate covered Strawberries, and milk chocolate covered apples! Yummy 

So he woke up to  a cute card on his night stand,  then this in the fridge with an I Love You! note attached.






The BEST part is he didn't take it to work (i thought he would to much on it all day) so now I get to enjoy it with him!!!! Yummy I can't wait!!!
Then when he got to work  he got his balloons and Snickers cake!!!
Then I am having lunch delivered to him right before he gets off work!!! Yummy SUSHI TIME!!!!

We will see if I can think of anything else to do before he gets home!!!
Maybe some brownies or something!!

Wow. . . Where has the time gone?

Tomorrow is mine and Ian's Anniversary.
4 years. . . 
Yes I know that isn't much to some people but it is a good   foundation for the next 60+ years! 
Now for those of you who know me are probably think WHAT!?!?!?! ONLY 4 YEARS!!!!!
And Reed is going to be  3 in a couple months! 
Yeah I know we did things a little out of order! Ian and I were only together 4 months when we found out I was pregnant with Reed. . .  . 
No,  I am not proud of it, but I am extremely proud that we have worked through the bad, laughed through the funny, and cried through the sad well and some of the happy memories. 
I know I couldn't be happier!!!!
We have made the best out of every situation that we have been given and have been blessed with two healthy wonderful boys!!!
What more can a girl ask for?

This morning I was doing some finalizing research for my edible arrangements and decided to check out the website for the ones you see for sale on TV. They are similar to the ones I make the main difference is the price! They make a small arrangement the base is a coffee mug and the price starts out at. . . . are you ready for this $42.00. That is just crazy. They also make and sell one similar to my Large  and they start at $79.00. . . .

Getting ready for Easter!

Easter 2011

I bought Reed an Easter book last year titled, An Easter Gift for Me.  It is a really cute book that Reed has fallen in love with. So much that he reads it all the time! Here is a small taste of the book.

 Jesus came to Earth as a baby. When he grew up, he thought people about God. "But some of the people did not understand the way Jesus fit into God's special plan." He died on a cross, and that was sad. But he came alive again and lives in heaven today!

I love how he knows the real meaning of Easter and not just the Easter bunny. Now don't get me wrong, he loves the Easter bunny too. This post is actually about the cute things the Easter bunny does at our house!
Our Easter routine: The night before we read his Easter book, this year now he will read the book to me or at least read how he sees it!  Then we talk about the Easter bunny, now that we have a big enough house I have some fun cute ideas planned for the Easter bunny. 
The day before Easter we are going to make lots of Easter cookies and treats!
Then that night  I will have to make sure Reed leaves a carrot out! The Easter Bunny may be hungry! 

On Reeds night stand the Easter bunny will leave his first egg and note, Reed will then follow the bunny prints (flour on the floor that looks like footprints) leading Reed to the kitchen table.
Then
The Easter bunny will be leaving a small edible arrangement * (More info on edible arrangement at bottom of post.) (a mini version with strawberries, grapes, cantaloupe, Peeps and the chocolate marshmallow eggs)  an empty Easter basket and another note.
Now time to fill the basket!
Let the hunting begin. . .  Eggs, Peeps, carrots, a couple small toys, a little chocolate. . . not to mention the piles of  bunny poop (crunch a bunch) he will find. Yucky. Imagine the look on his face when mommy eats it! lol
At the very end Reed will find a new Buzz Lightyear (he has been begging and begging for one) with another note.
Time for Reed to help his little brother look for some eggs 
Gotta hide some eggs outside.
Then that evening a Wonderful Easter dinner!

Germinating Seeds Part 2

So today I continued checking my seeds that were germinating and planted the ones that were ready into soil! This is Boring to some people or VERY EXCITING to someone like me!!! Yeah I'm a gardening nerd! 

Let me remind everyone I am terrible at  directions. . . . That's why I post pictures!!!


Supply List:
Containers for planting
Good garden soil ( Monrovia Organic is what I use)
Labels
Tweesers
Skewer 
Plastic dome


Directions:
Go through plastic bags with seeds and see which are ready to be planted and put them aside
Fill containers with soil about 3/4 the way. using skewer poke a hole in soil about 3/4 the way down
Open one baggy at a time, using tweezers gently pull seeds (you will see a bit of green and a long white root) away from paper towel and  place root end down into the soil gently cover up leaving the tip exposed.
Don't forget to label them!  When all the plants are in soil lightly water and cover with plastic dome! 

*Never let soil dry out! (Roots are very sensitive and will die easily) 
* Lift dome often to get fresh air in! ( I leave my one at night and left off first thing in the am and just check if soil starts to dry out, water and put dome back on.

Germinating Seeds

A few days ago I started germinating my seeds for this years garden. . . . this is the first year I have done this I usually buy starts.  So I laid out all my seeds and sorted them out. Some you start indoors now and some go directly into the soil later in Spring.  It has been 2 days since I started the germination process and I check my seeds probably every hour. . . hoping for a little plant to emerge! hehe Well today was the day, some have started to sprout. So now that I am successful in getting the seeds to pop, I will give the oh so easy instructions!
Supply List:
Seeds
Bowl of water
Paper towels
Ziploc bags Size small
Sharpie
Kitchen towel
Old shoe box, with dime size holes punched in side

Directions:
1. Figure out which seeds you want to germinate, I did tomatoes, lettuce, Bell Peppers, Spinach.. . ect. 
2. Label each Ziploc bag with seed type, and date.
3. Dip paper towel in water, remove and lay flat on kitchen towel.
4. Sprinkle seeds on paper towel, then fold up and put into Ziploc bag. DO NOT ZIP SHUT they need air.
5. Place all baggies of seeds into shoe box, close box and put in dark cool place.

Seeds should sprout in a couple days! Then you are on your way to your very own organic garden starts for a fraction of the cost to buy them.

 Today is a great day to plant my bulbs and my strawberries!!! I am so excited!!!
When we bought this house I slowly realized that whom ever lived here before had spent a lot of time and money on landscaping. Ian didn't see it, he thought we were going to have to spend hundreds of dollars to make this yard the way I want! Well time will tell!!! I will post some before pictures later today and some after in a few weeks when it is all done and maybe some photos of my progress along the way!  

Now you have to remember that the house/ yard sat empty for over a year. So by the looks of things I am going to be able to uncover lots of bulbs and perennial flowers and shrubs. . . . now keep in mind I have no idea what kind of flowers or shrubs these will be, but I am so excited to find out!!!! I bought a few of my own bulbs and shrubs also so no matter what I will have some color around the house,  lets just hope it matched what is already here!!! Well time to get to work!!!!

Fruit Trees are on the WAY!!!!


ALMOST THERE!!!

So we and by WE I mean Ian, my step-dad Fred and Uncle Mark. . . and my little sister Morgan . . .lol They have all contributed  TREMENDOUSLY!!! Fred has been falling these HUGE trees. 100+ ft Fir and Pine Trees!!! Mark and Ian have been cutting up and burning the branches and brush. Also they have been cutting and stacking the rest for firewood. :) Save some money next year!!! Morgan spent 2 hours in the pouring rain dragging and burning brush! WHAT A SISTER!!! I am sure about now you are wondering why I have not been helping. . . . well  you try having two boys one that runs around like crazy and the other one who crawls around like crazy! Not to mention they take naps at DIFFERENT times!!! So I stay inside and take care of the boys and run the worker bees water/beer or beverage of choice and also I make sure they are fed! They don't work unless they are FULL!!! lol  Anyways they have cut over 50 TREES!! (don't worry we are planting new ones)
 As of right now the trees are down (we have TONS of firewood) the stumps are ready to be removed, and My orchard is mapped out!!! ALMOST THERE!!!! 

        I have done tons of research to make sure the trees I get are well taken care of and pollinate each other and produce tons of fruit!!! They are very picky from the soil they are planted in to the direction they are planted (facing the sun or not), to how much water they get to the fertilizer. The Main this is to keep them healthy and bug free so they can be completely ORGANIC!!!
So this year I am planting 11 Trees!!!

Made my Very First Edible Arrangement!

I made this Edible Arrangement for Ian's Boss Krystal! She put up with so much of Ian's crap since he at Dutch Bros 8 YEARS AGO!!!! LOL HAHA! Now that she is switching to a different stand we wanted to do something and for some reason this option seemed so much better then real flowers!!! LOL and I am sure it tastes a lot better too!!!! SO here is a couple pictures of the final product!!!

Pork Roast with Oven Roasted Potatoes and Green Beans

So I have missed the last few days of my recipes! Since the boys are asleep and I mean all 3 boys are sleep, and I am awake catching up on lasts night Bachelor I figure I will catch up on my blog!!!

Pork Roast with Oven Roasted Potatoes and Green Beans 
 Ingredients 
Pork Roast
Can of Cream of Mushroom soup
Fresh Thyme
Fresh Rosemary
Potatoes (cut into pieces)
Green Beans
Bacon

Directions 
I use a Corningware round baking dish with lid but anything will do just cover with foil.
 Pre-heat oven to 400
Place Pork Roast in the center of baking dish, place potatoes around roast. Cover roast with cream of mushroom soup(do not add water). Lay fresh Thyme and  Rosemary  on top of soup. Cover with lid and place in oven. Cook for 35-45 mins depeneding on size of roast. Let rest for 10 mins before slicing.  

While the Roast is resting. Slice bacon into small bit size pieces, add to hot pan and fry till done leaving grease and bacon in the pan add frozen or fresh Geen beans and cook a few mins until done.
Then Eat up!!!!! Yummy

Feta & Basil Stuffed Chicken & Roasted Potatoes

Dinner was so Yummy tonight! Feta and Basil Stuffed Chicken and Roasted Potatoes. 
Ingredients
2 Chicken Breast
Fresh Basil
Crumbled Feta Cheese
Fresh  Sliced Garlic 
Sea Salt
1 TBS Butter 

4 Whole Potatoes Cut in to Medium bite size pieces
Olive Oil
1 Med Red Onion sliced

Directions

Cut a deep pocket in chicken breast, stuff with feta cheese and a whole basil leaf. Gently press shut.
Sprinkle Chicken with Sea Salt.  
In a hot skillet add butter and garlic,  once butter is melted add chicken and cover with lid. 
Let cook for 20-25 minuets flipping once.
While chicken is cooking heat another pan on stove top and lightly coat pan with olive oil.
Add potatoes and onions
Season to taste. Cover and cook for 20 minuets and stir occasionally.
I also did a garden salad with cucumbers, avocado, cranberries and balsamic vinaigrette dressing.
And steamed broccoli. 
YUMMY 

Then as Reed would say "TADA"

Plans for this years MASSIVE GARDEN

Since starting my blog I have had a few friends ask me about growing veggies for them. I have a passion for gardening. I enjoy being outside, a watching each plant grow and produce food for my family! It is amazing (and a little old fashion) hehe to grow and can your own veggies, but I love it!

Anyways back on track! This year I am going to grow all kinds of veggies, fruit, and herbs, for my family and a couple friends.  Also I don't do this for money or a profit, I do it cause it is what I love to do!!!!

I am just panting my fruit trees! We did get instant orchard trees so they come ready to produce fruit but I have no idea how much of anything I will get off my trees this year!


I use these veggies for everything from Fresh everyday eating to canning and freezing  and dehydrate my herbs so I have them all year!

I also have 30 laying hens so I have Fresh Organic Free Range eggs everyday
and this year we will be raising meat chickens with will also be completely organic. (I have to know ahead of time if anyone whats meat chickens so I know how many chicks to order) 


This is why I love summer!!! Gardening season is almost here!!!! 
Also I have a couple friends who just dont have the space. . . haha I have learned over the years how to grow tons of veggies up. Everything from Cucumbers and squash to watermelons and cantaloupe!   If you need any help to hesitate to ask. I love helping fellow gardeners!!!

Projects in the making!

So now that me house is finally coming together I have more time to do small crafts. I am learning! I have an ancient sewing machine! It gets the job done but it is no where near as cool as the new ones I have been shopping for.  Anyways I am working on a couple aprons So cute one half apron and one full apron. Then I am also working on a few reusable shopping bags made from recycles dutch bros coffee burlap sacs. They are coming out so darn cute! I will post pictures when they are done! Since these are my first real sewing projects bare with me! I will get them soon. I promise!

Red Bean Chili (slow cooker) & Corn Bread

I have some family coming over today to help cut trees and when I say trees I mean 40 foot high trees. I need to make room for my fruit orchard and make sure they get enough sun! So about 50 trees have to go, and with a foot of snow on the ground I figured something nice and warm would be the best thing to serve for lunch. So today I made a SUPER EASY Red Bean Chili and Cornbread!!! So Yummy!!!
This is the perfect recipe for someone who doesn't want to be in the kitchen all day I spent 30 minutes in the kitchen and am letting the slow cooker do the rest!!!!

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 8 ounces smoked sausage, such as andouille or apple chicken sausage
  • 1 cup chopped onion
  • 1 red or green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (4 ounces) mild green chili peppers
  • 2 to 3 tablespoons diced jalapeno peppers, or to taste
  • 2 cans (14.5 ounces each) diced tomatoes or fire-roasted tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon grill seasoning blend
  • 2 to 3 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt, or to taste

Preparation:

In a large skillet or saute pan, brown the ground beef and sausage with onion until meat is no longer pink. Add the bell pepper and garlic and cook, stirring, for about 1 minute longer. Transfer to the slow cooker and add remaining ingredients; cover and cook on low for 6 to 8 hours, or on high  for 3 to 4 hours.
Serves 6 to 8.
