Feta & Basil Stuffed Chicken & Roasted Potatoes

Dinner was so Yummy tonight! Feta and Basil Stuffed Chicken and Roasted Potatoes. 
Ingredients
2 Chicken Breast
Fresh Basil
Crumbled Feta Cheese
Fresh  Sliced Garlic 
Sea Salt
1 TBS Butter 

4 Whole Potatoes Cut in to Medium bite size pieces
Olive Oil
1 Med Red Onion sliced

Directions

Cut a deep pocket in chicken breast, stuff with feta cheese and a whole basil leaf. Gently press shut.
Sprinkle Chicken with Sea Salt.  
In a hot skillet add butter and garlic,  once butter is melted add chicken and cover with lid. 
Let cook for 20-25 minuets flipping once.
While chicken is cooking heat another pan on stove top and lightly coat pan with olive oil.
Add potatoes and onions
Season to taste. Cover and cook for 20 minuets and stir occasionally.
I also did a garden salad with cucumbers, avocado, cranberries and balsamic vinaigrette dressing.
And steamed broccoli. 
YUMMY

Plans for this years MASSIVE GARDEN

Since starting my blog I have had a few friends ask me about growing veggies for them. I have a passion for gardening. I enjoy being outside, a watching each plant grow and produce food for my family! It is amazing (and a little old fashion) hehe to grow and can your own veggies, but I love it!

Anyways back on track! This year I am going to grow all kinds of veggies, fruit, and herbs, for my family and a couple friends.  Also I don't do this for money or a profit, I do it cause it is what I love to do!!!!

I am just panting my fruit trees! We did get instant orchard trees so they come ready to produce fruit but I have no idea how much of anything I will get off my trees this year!


I use these veggies for everything from Fresh everyday eating to canning and freezing  and dehydrate my herbs so I have them all year!

I also have 30 laying hens so I have Fresh Organic Free Range eggs everyday
and this year we will be raising meat chickens with will also be completely organic. (I have to know ahead of time if anyone whats meat chickens so I know how many chicks to order) 


This is why I love summer!!! Gardening season is almost here!!!! 
Also I have a couple friends who just dont have the space. . . haha I have learned over the years how to grow tons of veggies up. Everything from Cucumbers and squash to watermelons and cantaloupe!   If you need any help to hesitate to ask. I love helping fellow gardeners!!!

Projects in the making!

So now that me house is finally coming together I have more time to do small crafts. I am learning! I have an ancient sewing machine! It gets the job done but it is no where near as cool as the new ones I have been shopping for.  Anyways I am working on a couple aprons So cute one half apron and one full apron. Then I am also working on a few reusable shopping bags made from recycles dutch bros coffee burlap sacs. They are coming out so darn cute! I will post pictures when they are done! Since these are my first real sewing projects bare with me! I will get them soon. I promise!

Red Bean Chili (slow cooker) & Corn Bread

I have some family coming over today to help cut trees and when I say trees I mean 40 foot high trees. I need to make room for my fruit orchard and make sure they get enough sun! So about 50 trees have to go, and with a foot of snow on the ground I figured something nice and warm would be the best thing to serve for lunch. So today I made a SUPER EASY Red Bean Chili and Cornbread!!! So Yummy!!!
This is the perfect recipe for someone who doesn't want to be in the kitchen all day I spent 30 minutes in the kitchen and am letting the slow cooker do the rest!!!!

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 8 ounces smoked sausage, such as andouille or apple chicken sausage
  • 1 cup chopped onion
  • 1 red or green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (4 ounces) mild green chili peppers
  • 2 to 3 tablespoons diced jalapeno peppers, or to taste
  • 2 cans (14.5 ounces each) diced tomatoes or fire-roasted tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon grill seasoning blend
  • 2 to 3 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt, or to taste

Preparation:

In a large skillet or saute pan, brown the ground beef and sausage with onion until meat is no longer pink. Add the bell pepper and garlic and cook, stirring, for about 1 minute longer. Transfer to the slow cooker and add remaining ingredients; cover and cook on low for 6 to 8 hours, or on high  for 3 to 4 hours.
Serves 6 to 8.
