Dinner was so Yummy tonight! Feta and Basil Stuffed Chicken and Roasted Potatoes.
Ingredients
2 Chicken Breast
Fresh Basil
Crumbled Feta Cheese
Fresh Sliced Garlic
Sea Salt
1 TBS Butter
4 Whole Potatoes Cut in to Medium bite size pieces
Olive Oil
1 Med Red Onion sliced
Directions
Cut a deep pocket in chicken breast, stuff with feta cheese and a whole basil leaf. Gently press shut.
Sprinkle Chicken with Sea Salt.
In a hot skillet add butter and garlic, once butter is melted add chicken and cover with lid.
Let cook for 20-25 minuets flipping once.
While chicken is cooking heat another pan on stove top and lightly coat pan with olive oil.
Add potatoes and onions
Season to taste. Cover and cook for 20 minuets and stir occasionally.
I also did a garden salad with cucumbers, avocado, cranberries and balsamic vinaigrette dressing.
And steamed broccoli.
